Being that I have already lost 2lbs, going into the holidays needed to be an eating fest, so Kurt went a little nuts this morning with making a special tasty treat for us.
Exhibit A: Gluten Free Vegan “Sausage” Biscuits
These are pretty simple to make (we made 6 biscuits, but you can double recipe to make more):
Biscuit Mix
1/4 cup Quinoa Flour
1/4 cup Potato Starch
1/4 cup Tapioca Flour
1/4 cup Rice Flour
2 tsp Xanthum Gum
1 tsp Salt
2 tsp Baking Soda
1/3 cup very chilled Earth Balance Soy Free Butter
1 cup homemade Almond Milk
Mix it, put it into 6 balls and bake for 8-10 minutes based on your oven at 350.
Sausage Cream
All to taste: Oregano, Basil, Fennel Seed (crushed), Sage, Salt, Pepper, Hot Pepper Flakes
2 Garlic Cloves
1 cup Almond Milk
1 tbsp Coconut Aminos
1 tsp Olive Oil
1 cup Cashews
Go in order down the list and put into the vitamix on a medium speed. Spend a little more time on the spices to get them really fine. The Cashews should end up with a few pieces sprinkled in. Add in water to smooth out and make to the drippiness you want…. and Voila! It will be a perfect blend for you.
Plate the biscuits first and then drizzle the “Sausage Cream” over top. Add in a little green for the sparkle with a few chopped scallions. It will help it to not look so brown!
